For those of you who don’t know, my favorite cuisine is Mexican food. Nothing beats yummy steak tacos or fajitas. I always buy my meat in bulk, marinate and freeze it. My marinades always come out pretty good, but they taste different almost every time. I’m not sure why it took me so long just to whip up an easy marinade recipe to have on hand. The key to my steak marinades is to avoid marinating them in any kind of salt – this will dry your meat up. This marinade is super easy, delicious and you’ll need very few ingredients… most of which I’m sure you’ll already have! Enjoy!
Ingredients:
- 2-3 lbs of flank steak
- 1/2 cup of olive oil
- 1/2 cup of lime juice
- 1 tablespoon of fresh minced garlic
- 3/4 tablespoon ground cumin
- 1 tablespoon of onion powder
- 1 tablespoon of chili powder
- 1 tablespoon of paprika
- 1 tablespoon of fresh cilantro (preferably fresh but dried will work)
- 2 tablespoons of soy sauce
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of white sugar
- 1/4 cup of orange juice
- 1 teaspoons of dried oregano
- Combine all ingredients into a mixing bowl and whisk together.
- Poke steak with a fork all over and on both sides.
- Put the flank steak into the resealable/ ziplock bag. Pour the marinade into the bag, and seal it up tight. Make sure that all of the meat is covered in the marinade.
- Refrigerate/ marinate for 24 hours. (Even a little longer is fine!)
- Heat an outdoor grill to medium-high heat.
- Remove the flank steak from the marinade (discard the rest of the used marinade).
- Cook on the grill to your desired doneness.
- Once done, remove steak from the heat and let it rest for about 10 minutes before slicing.
- Slice against the grain, sprinkle with kosher salt and serve.
