- 2 ripe bananas – smashed (about 1 heaping cup)
- 1/2 cup salted butter – melted
- 1 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 3/4 cups of light brown sugar
- 1 teaspoon of vanilla extract
- 1 large egg
- 1 1/2 cups of all purpose flour
- 1/4 cup of granulated white sugar
- 1 1/2 teaspoon of baking powder
- 1/2 cup of chopped walnuts
- 1/2 cup of semi sweet chocolate chips
Directions:
- Set oven to 350°F.
- In a small mixing bowl, combine all dry ingredients. (Cinnamon, nutmeg, flour, brown sugar, white sugar, walnuts and chocolate chips) – Mix.
- In a separate small bowl, combine all wet ingredients. (Bananas, butter, egg, and vanilla extract) – Mix.
- Combine wet and dry ingredients together in a bowl. Be sure to whisk well so that there are no lumps.
- Line muffin pan with paper muffin tins. Spray with non-stick cooking spray. Fill 12 muffin tins evenly with mixture.
- Once oven is up to temp – bake for 20-25 minutes total or until toothpick comes out clean from the middle of each muffin.
